“Late harvest wines captured my attention shortly after I settled on making bubbles. I thought a lot about how a meal is constructed and that flow, from start to finish, can be accentuated by the proper wines.
Bubbles freshen up the palate and usually kick off the meal. Late harvest wines are unique because they can work as either the starter or the closer. I appreciate that flexibility!
This wine is nostalgic as my father can recall sitting on his grandfather’s lap while enjoying a sip of an off-dry Gewürtraminer. I was interested in the challenge of creating a late harvest wine that wasn’t too sweet. Yes, it has residual sugar, but there is also enough acidity to keep the wine from being cloying.
Our version is floral and spicy with a nice mid-palate weight that isn’t too syrupy while the finish is crisp and long. Served chilled, this wine works very well with creamy cheeses or fruit based desserts.”
