“This wine is unique in our portfolio as the only wine produced from the 2020 harvest. The Pinot Noir from our Honey B estate vineyard in Carneros reached perfect ripeness in August of 2020, and we were able to harvest before the onset of the Glass Fire. Made from 100% Pinot Noir, the grapes were pressed prior to fermentation. This yielded a wine with a characteristic pale pink hue and light copper reflections. Using the traditional method, I kept the wine en tirage for 24 months before disgorgement. With these two years on the lees, the wine expresses toasty autolytic notes that will continue to develop with further bottle age.
Sparkling wines made from Pinot Noir tend to express more of a red fruit profile, and this bottle is no exception. The beautiful pale pink hue in the glass hints at notes of red apple, wild raspberry, and red plum, which are perfectly balanced by bright citrus notes. With no residual sugar, our sparkling wine is ideal for a myriad of food pairings, and is the perfect way to make every day a celebration. Cheers!”
