The 2016 is a blend of Merlot (85%) with a small amount of Cabernet Sauvignon (15%). It is fermented in French oak—33% new—for 18
months before being bottled and then bottle-aged for an additional eighteen months.
Tasting Notes
The 2016 Paloma Merlot soars out of the glass with gorgeous notes of rich, dark fruits, dominated by blackberry and blueberry, complemented by subtle notes of anise, cocoa and bramble. The wine has a luscious mouthfeel, with sweet tannins and beautiful ripe fruit on the mid-palate. While the alluring nose might tempt you to consume the wine rapidly, you will be rewarded by allowing the wine to evolve in the glass, revealing a long, silky finish. We encourage you to enjoy this wine at this youthful stage and further appreciate the evolution of well structured, Spring Mountain fruit.
